Ingredients:
- 3 tablespoons Oya Foods butternut powder
- 1 small onion, chopped
- 1 clove garlic, minced
- 1 tbsp olive oil or butter
- 2 cups vegetable/chicken stock
- ¼ cup cream OR coconut milk
- Salt & pepper to taste
- Pinch of nutmeg or cinnamon (optional)
- 2 tablespoons plain Greek yogurt or sour cream (for garnish)
- Spring onion (optional)
Instruction
- In a pot, heat the olive oil and sauté the onion and garlic until soft.
- Add the Oya Foods butternut powder, stir for a minute to toast lightly.
- Pour in the stock gradually, stirring to smooth out any lumps.
- Let it simmer for 5–8 minutes until it thickens.
- Stir in the cream or coconut milk, season with salt, pepper, and a pinch of nutmeg.
- Blend if desired, then serve into bowls.
- Top each bowl with a swirl of yogurt or sour cream – just one spoon gently swirled with the back of a spoon.
- Garnish with spring onion and enjoy!
