These Healthy Dried Spinach & Quinoa Patties are a perfect combination of plant-based protein, fiber, and vitamins. Made with wholesome ingredients and cooked using minimal oil, they’re crispy on the outside, soft on the inside, and full of flavour. Ingredients

(Makes 8–10 patties)

  • ½ cup Oya Foods Dried Spinach
  • ½ cup cooked quinoa
  • ½ cup mashed sweet potato
  • ¼ cup oat flour (or finely ground rolled oats)
  • 1 tablespoon ground flaxseed + 3 tablespoons water (flax egg substitute)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • ½ teaspoon cumin
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley or coriander, chopped
  • ½ teaspoon baking powder (for lightness)
  • 1 tablespoon olive oil (for brushing, if baking)

 

Instructions

 

  1. In a small bowl, mix ground flaxseed with 3 tablespoons of water and let sit for 5 minutes (this acts as a binder instead of eggs).
  2. In a mixing bowl, mash the cooked sweet potato until smooth.
  3. Add the spinach, cooked quinoa, oat flour, salt, pepper, paprika, cumin, garlic powder, onion powder, lemon juice, and fresh herbs.
  4. Stir in the flax egg and baking powder. Mix well until the mixture holds together.

Option 1: Bake (Healthiest Method)

  1. Preheat oven to 180°C (350°F).
  2. Line a baking sheet with parchment paper and lightly brush with olive oil.
  3. Shape the mixture into small patties and place them on the tray.
  4. Bake for 15–18 minutes, flipping halfway, until golden and firm.

Option 2: Pan-Sear (Minimal Oil)

  1. Heat ½ teaspoon of olive oil in a non-stick pan over medium heat.
  2. Cook patties for 3–4 minutes per side, until lightly crisp.

Serve warm with avocado dip, Greek yogurt sauce, or hummus for a nutrient-packed meal.
