These Healthy Dried Spinach & Quinoa Patties are a perfect combination of plant-based protein, fiber, and vitamins. Ingredients
(Makes 8–10 patties)
- ½ cup Oya Foods Dried Spinach
- ½ cup cooked quinoa
- ½ cup mashed sweet potato
- ¼ cup oat flour (or finely ground rolled oats)
- 1 tablespoon ground flaxseed + 3 tablespoons water (flax egg substitute)
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon smoked paprika
- ½ teaspoon cumin
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- 1 tablespoon lemon juice
- 2 tablespoons fresh parsley or coriander, chopped
- ½ teaspoon baking powder (for lightness)
- 1 tablespoon olive oil (for brushing, if baking)
Instructions
- In a small bowl, mix ground flaxseed with 3 tablespoons of water and let sit for 5 minutes (this acts as a binder instead of eggs).
- In a mixing bowl, mash the cooked sweet potato until smooth.
- Add the spinach, cooked quinoa, oat flour, salt, pepper, paprika, cumin, garlic powder, onion powder, lemon juice, and fresh herbs.
- Stir in the flax egg and baking powder. Mix well until the mixture holds together.
Option 1: Bake (Healthiest Method)
- Preheat oven to 180°C (350°F).
- Line a baking sheet with parchment paper and lightly brush with olive oil.
- Shape the mixture into small patties and place them on the tray.
- Bake for 15–18 minutes, flipping halfway, until golden and firm.
Option 2: Pan-Sear (Minimal Oil)
- Heat ½ teaspoon of olive oil in a non-stick pan over medium heat.
- Cook patties for 3–4 minutes per side, until lightly crisp.
Serve warm with avocado dip, Greek yogurt sauce, or hummus for a nutrient-packed meal.
